What about making the wide collar band (over which the pleats climb) in a contrasting / different colour to the rest? Hard to see if that's possible without seeing the back...I am aware that's not a colour suggestion :-)

As for the color of that dress, you've done lots of black, white, navy, and red, and those colors really work for you. I'd do this dress in navy or in red, a matte fabric, so you can dress it up for a party or down for dinner out with your husband. If you want to move into other shades, you could try a rich, jewel-tone purple or a pink in pretty much any shade. :) I'm looking forward to seeing what you do with it!
